Use Up Those Leftover Bananas

A lot of people immediately think of banana bread when trying to decide what to do with their leftover bananas. These addicting muffins are perfect if you’re looking for a lighter option!

Have a bunch of overripe bananas? Use them up in these light muffins with a crunchy cinnamon crumb topping.

  • 1 Muffin/cupcake pan
  • 12 Muffin/cupcake liners


Crumb topping

  • 1/4 cup All-purpose flour
  • 1/4 cup Rolled oats
  • 1/4 cup Brown sugar packed
  • 1 tsp Ground cinnamon
  • 4 Tbsp Butter room temperature


  • 1 1/2 cups All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 4 Ripe bananas mashed
  • 3/4 cup Granulated sugar
  • 1 Egg slightly beaten
  • 1/3 cup Butter melted
  • 1 tsp Vanilla extract


Crumb topping

  • In a medium bowl combine the flour, rolled oats, brown sugar, and cinnamon.
  • Add in the butter and use a fork or pasty cutter until crumbly.
  • Set the topping aside while preparing the muffin batter.


  • Preheat oven to 375 degrees F.
  • Prepare a muffin/cupcake pan with paper liners. Lightly spray the paper liners with cooking spray.
  • In a large bowl combine the flour, baking soda, baking powder, and salt. Set aside.
  • In another bowl combine the mashed bananas, sugar, egg, and melted butter. Mix well to combine.
  • Add the banana mixture to the dry ingredients and stir just until moistened.
  • Fill the muffin liners until they are 2/3 full. Be careful not to overfill, the batter will yield exactly 12 muffins.
  • Sprinkle the crumb topping evenly over the muffin batter.
  • Bake the muffins at 375 degrees F for 20 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the muffins to cool for 10 minutes in the pan before removing. Then cool to room temperature on a wire rack.


Here are some helpful notes:
  • You can make these muffins without liners, if you prefer. Just make sure to spray your muffin pan with cooking spray.
  • If you don’t have 4 ripe bananas you can use less. If you are using less than 4 bananas add in some sour cream or yogurt to replace the missing moisture.
  • Try adding in some chocolate chips or chopped nuts too. These are delicious additions!
  • I love banana muffins a little warm. Just microwave a room temperature muffin for about 10-15 seconds and it feels like it was freshly baked!
